Born from the mineral balance of Bombino bianco, a white variety native of Lazio, our organic spumante GAIVS classic method brut combines the features of our terroir with the elegance of perlage. After a strict selection in single vineyard to obtain the appropriate organoleptic characteristics, grapes are harvested by hand and vinified as basic wine for sparkling process. Then it starts a refermentation in bottles to develop perlage and complexity according to champenoise method. Eventually the bottles are put to rest for 36 months, during which the yeasts in bottle give a rich and intense bouquet to the spumante, transforming it in a complex and unique product.
